Dosa with Chutney/Sambaar : Dosa is a popular breakfast item of Kerala. The ingredients are rice and split skinless black gram. Dosa is a thin pancake made from fermented batter. The batter is then poured into a griddle or tawa so as to make a pancake. The best combination for Dosa is with Chutney. Chutney is the mix of coconut, green chili and small onion grinded into liquid form. Sambaar is another option which is a popular south Indian curry made from dal (gram) and vegetables.
Kerala home meal : Kerala is known for its traditional and ethnic food. A simple Kerala home meal is a combination of vegetarian and non-vegetarian items. Coconut is used in almost all the dishes of Kerala and many of them are spicy. Apart from the rice, other items in the meal are a vegetable curry, a fish curry, thoran (made of vegetables boiled with salt), Pappad (wafers deep fried in coconut oil), pickle, curd etc.
Vellayappam with vegetable/fish/meat stew : Vellayappam is like a pan cake made from the mix of rice and coconut. It is one of the delicious and healthy breakfasts of Kerala. They are made from batter made out of rice, coconut, sugar, yeast and a pinch of salt. The batter is poured into a heated pan for cooking. Vellayappam is usually served with Stew. Stew can be made either using vegetables ( mainly potato and coconut milk) or using fish or meat.
Poori with masala : This is another choice of breakfast. Poori is made using wheat flour. The dough of wheat flour is flattened to small circular shape and deeply fried in oil. Puri is served with Masala , which is a spicy curry cooked using potatoes, onions and some spices.
Ulli Vada :Onion(Ulli) is the main ingredient of Ulli vada. Onion is mixed with green chillies, salt, red chili powder and curry leaves. The mixture is made to batter using Gram flour or rice flour and water. The batter is deep fried in oil. This you can have for the tea break.
Idly with chutney/sambar : Idli, the savory cake of South India is a popular breakfast item. They are made by steaming the batter made by mixing fermented black lentils and rice.
Sadya : Sadya is the traditional feast of Kerala, usually served in fresh plantain leaf. Apart from rice, Sadya includes an amazing variety of vegetarian delights, which are known as Saambar, Kaalan, Olan, Avial, Elissery, Koottukarry, Pachadi, Kichadi etc. Crispy Pappad and variety of pickles accompany this sumptuous sadya. The final course of Sadya is Payasam, the sweet desserts. Sadya is a part of any celebration like wedding, naming ceremony and other religious festivals.
Elayada : A dough is made out of rice powder, which is flattened on a piece of banana leaf. A mix of coconut and Jaggery is layered in to it. The leaf is folded and steamed to cook.
